Jessica Mach, chef and managing partner of Pho Ba Luu restaurant in Louisville’s Butchertown neighborhood, is a native of Vietnam, and now an American citizen, who has lived in the US more than 20 years. While new to owning a restaurant, the recipes and dishes now served are anything but new to her. Jessica’s first experiences in the kitchen came under the careful tutelage of her mother where she learned to chop vegetables when still a child in Saigon. Her mom would continue Jessica’s immersion in the ways of the kitchen for many years allowing Jessica to perfect her craft.
Pho Ba Luu’s recipes today reflect those of her childhood in Saigon and represent the fundamentals of everyday Vietnamese comfort food, the staple of most Vietnamese kitchens and certainly the essence of her mother’s cooking.
